Coffee Vocab: SALT


When describing coffee, salty is typically not a good descriptor word. Salt is one of the four basic taste sensations registered on the sides of the tongue. Fourth of July Coffee Drink


Having a Fourth of July party this weekend? We have the perfect drink for you that will delight your guests, and have them asking for more...

Coffee Coke Float
June 30, 2009

  • 2/3 half and half (light) cream
  • 2 1/2 cups espresso, or strong coffee, cold (we suggest a real shot of Vienna Coffee's espresso con Robusta, but VCC's Sulawesi will also be a good start)
  • 4 scoops coffee ice cream (click link for a homemade coffee ice cream recipe)
  • 1 -2 liter bottle of Coke
  • 1/2 cup Kahlua (this can be omitted for a non-alcoholic drink)
  • 4 frosted glasses

Mix the cream and the cold coffee

Add 2 tbs Kahlua to each glass

Place a scoop of the ice cream in each of four glasses

Half fill each glass with the coffee then fill up the rest of the way with Coke.

Serves 4

Coffee Vocab: FINISH


In coffee terms, the finish describes the aftertaste on the palate after the coffee is swallowed. Full-bodied coffee tends to have lingering finishes, while thinner coffees may be fleeting. For example, our Organic, Komodo Blend (Swiss Water Process Decaffeinated coffee from the South Pacific) has a mildly sweet start and a slightly floral finish. To better understand what finish is describing, come to the roastery for a cupping. There you will be able to sample a few of VCC's coffee and learn for yourself how to better understand and describe what about a certain coffee you like and dislike. That way, we can help you find the best blend or single origin coffee for your tastes.

INTRODUCING: Java on the Square

We are pleased to announce...
Java on the Square in Athens, Tennessee. Their coffee shop is a beautiful space with very friendly staff and exceptional coffee (if we do say so ourselves). In a recent letter the owners of Java on the Square, Rick and Lea Anne, wrote...

"Rick and I have been looking for a business for some time and the opportunity to procure a local coffee shop became available. We bought the shop and after 3 months of renovating, we finally decided that it was time to open, ready or not and the first sale was February 14 - Valentines day! We settled on Vienna Roasters in Maryville, TN due to their attention to detail and willingness to help us in many facets of the business. Vienna's owner, John Clark, made a special trip to our shop and gave a coffee and espresso training session with our 6 employees before we opened. We decided on a soft opening and just turned on the open sign and opened the doors without announcing it or advertising the opening. Three weeks later we had our grand opening.

Business has been steady. We have received lots of positive feedback from the community. Everyone loves the coffee and espresso and says the flavor is great! Currently we are booking different venues of entertainment. (Jazz, Poetry, Blues Band, Sushi night, kids reading time)

Being a small business owner / manager with shared responsibilities with your spouse has been challenging and time consuming, but we have enjoyed all of it so far. There is no way we could have done it without attending Coffee School (Bellissimo (ABC training)) and Vienna's help with bean selection and employee training. From design stage to the first sale it was a wild ride and we look forward to the years ahead.

Coffee can Fuel Cars!


Turns out you can make biofuel from just about any oily plant product. Corn may be the standard, but coffee works at least as well, and it makes your car smell like a Starbucks!

Experts say it takes about 5-7 kg of coffee grounds to get one liter of biofuel, which with a medium-sized production would yield a cost of about $1 per gallon. Plus, it's already used: you can just walk around to your local coffeeshops and convenience stores and stock up the same way you would on vegetable oil.

Creating fuel from the grounds uses the same procedure as other biodiesels, transesterification, which is sort of complicated to explain but fairly inexpensive. The US estimates we consume over 7 tons of coffee each year, which would yield about 340 million gallons of biodiesel.

But mostly, a subtle coffee scent might overcome the significantly less savory odors currently dominating my car. For long story click here.

All of our organic coffee growers have been certified by independent third party inspectors such as OCIA (Organic Crop Improvement Association) and Mayacert to strictly meet all the standards of the USDA National Organic Program, and now our facility is certified also.

Coffee Vocab: BODY


In Coffee shops around the world and on coffee descriptions you might come across the world body, such as Vienna Coffee's Rich Mountain full bodied coffee blend. Body is the mouth feel and perceived viscosity of the coffee. As you swish different coffees around in your mouth some will feel "heavy" and some will feel "light." This sensation comes primarily from the amount of vegetable oils and fats in the brew and varies between types of coffee. Some brewing methods, such as the French Press, produce heavier-bodied coffee by allowing more coffee solids and oil into the brew.
